Pelau for March
When I miss a few posts, I always say I’d jumble all my thoughts into one big post, well here it is. I will affectionately call it my pelau. Pelau is a trini dish (that is majorly delicious with a side of cole slaw and a glass of parlor juice) that consists of rice and chicken all cooked in one pot. As easy as it sounds, everybody can’t make it. Just like this post. So let’s see if I can remember all that I’ve missed. I had the surgery last week on my cervix. It went well. Doctor called and said she got all the abnormal cells out and when she tested it, it came back as severely abnormal. It’s a lucky thing we opted to do the procedure. All I remember was her telling me to shift onto the operating table and scoot down and that was all she wrote. Your girl was out like a light. No pain, no drama, and I’m still here. Praise God.
I started cooking recipes from the Epicurious diet and once I’m in the kitchen, I am on a roll and can’t be stopped. I turn on Food Network, and start performing the ass like I’m on tv. I made ginger pumpkin muffins

and my very first lasagna.
So proud. I put the toothpicks in the top of the lasagna because I saw a lady do that once on a Throwdown with Bobby Flay. This way, your cheese doesn’t stick to the foil. Genius!
Lately my Sundays have been spent preparing the week’s meals. I cook for me and the kids all on Sunday and that’s been working like a charm. If you haven’t already, invest in a crock pot, it will be your new best friend. Stay tuned for what I make next week.
Now for the hard stuff. I had to call the ambulance for Kai on Saturday. I always thought if I were placed in an emergency situation, I would be calm and in control. So not the case. I panicked and stood at the door watching and crying. Here’s what happened:
I wanted to go out for an oyster Po’ Boy. I have been wanting one for like forever and it just so happened that Guy Fieri showed a local place on Triple D. So when I got in from Calypso, I told M’khai (my food buddy) to get dressed to go for eats. He didn’t want to go and that threw me right off my game. I ended up in bed, listening to Kai snore at around 10pm. I heard her stomach make a grumble noise and I decided to pick her up and turn her onto her stomach. When Kai is out for the night, you could pretty much do anything to her and she won’t budge. After I turned her over, she was very restless but I was watching Justified and didn’t pay much attention to it. But the restlessness continued which was very odd so I picked her up and I must admit my eyes were still glued to Justified ( I know bad mommy) but I could feel that she hadn’t taken a breath in the time that I picked her up. I know that even sounds odd but I noticed that her stomach never moved. When I glanced down at Kai, she was teary eyed, mouth shut and drooling and looked scared as hell. I jumped up and yelled out to hubs that something was wrong. He is so fricking casual, its annoying!!! I’m freaking and I need everyone around me to freak also. He literally tossed me the phone and I called 911, well I first called 119-I was really panicking. As I’m on the phone with the dispatcher, he took Kai from me and who knew what he did but she cried out. I was so relieved. The EMTs arrived within 3 minutes and so did the cops. Everyone was in my bedroom and I’m stuck at the door, freaking out. Turns out she had a ton of mucus in her nose and mouth and they think it somehow blocked her passage way. I took her to the ER anyway because I wanted them to get all the damn mucus out but more importantly, they wanted to run a test for RSV on her. She never showed any signs of a cold. Even when she’s nursing, there’s never a break in her latch for her to catch her breath. I was so very scared. After all was said and done, hubby and I both agreed that I definitely need to take a CPR course. I obviously don’t know how to save a life.
